After writing the history of the governor tacos in our "Origins of world food" section, we could not resist the craving and there was no choice but to give in to the temptation of this Mexican delicacy.
To give it the traditional touch, we decided to cook them at home, following this simple recipe:
(Serves 4 people)
11 to 15 large shrimp, peeled and chopped
½ medium onion
½ stick of butter
1 red pepper, sliced
1 stalk of celery, chopped
1 pinch of oregano
½ kg of Oaxaca cheese (or substitute with Mozarella)
6 to 8 corn or flour tortilla
Fry the onion with the butter.
When it changes color add the celery and the pepper, letting it fry for a few minutes.
Add the shrimps and season with salt, oregano, and lemon juice.
Once the shrimps have cooked, they are topped with the cheese until melted.
Serve on hot tortillas.
