This recipe combines two of the most emblematic ingredients of Mexico, mole, and nopales. Ideal for a vegetarian diet, this dish is accompanied by panela cheese, a white, fresh, and smooth Mexican cheese of pasteurized cow's milk.
This dish, in addition to being delicious, is quite nutritious since the nopal is rich in calcium, vitamins, proteins, and minerals.
Here is the recipe:
2 tablespoon sesame seeds, toasted
1 cup of Avocado Oil
1 jar Doña María Nopalitos, drained
1 garlic, finely chopped
8 slices of Panela Cheese
In a medium saucepan over medium heat cook the mole paste until warmed. Remove from heat.
In a large skillet over high heat, heat avocado oil. Sauté the Nopalitos with garlic 3 minutes. Remove from heat.
In a large skillet over medium heat, heat avocado oil. Cook cheese for 2 minutes on each side until lightly browned.
In each serving bowl, place ¼ cup mole mix. Sprinkle with sesame seeds. Top with 2 cheese slices and sautéed nopalitos.
