(Serves 6)

  • 1 panela cheese, 284g

  • 1/2 cups olive oil, for the filling

  • 6 garlic cloves, finely minced

  • 2 cups of guajillo chile, cut into thin rings, for the filling

  1. Hollow out the panela cheese with a spoon, reserve what you removed from the center for the filling, and cut it into squares.

  3. Add the epazote, the Panela Cheese that you reserved for filling, and season with salt and pepper to your liking. Cook for 10 minutes and reserve.

  4. Place the Panela Cheese on an extended plate and fill it with the preparation.

To accompany it can be served with croutons, flour tortillas, corn tortillas, or cookies.
