Huevos Divorciados Recipe

Divorced Eggs (huevos divorciados) is a traditional Mexican breakfast that consists of two eggs divided by something in the middle like refried beans, potatoes, or avocado. Then one of the eggs is topped with green salsa (tomatillo) and the other with red salsa (Mexican salsa).

Ingredients

(Serves 2)

Instructions

  1. In a frying pan with hot oil, fry the tortillas, trying not to leave them too toasty. Remove excess fat and reserve.

  2. Using the same pan, cook two fried eggs separately.

  3. In different pans, fry each of the sauces. Heat the beans too.

  4. Serve the tortillas as a base on a plate, add beans in the center of the tortilla, add red sauce on one side and green sauce on the other. Incorporate the eggs on top (one on each side)

  5. Sprinkle the cotija cheese on top and garnish it with cilantro.


The classic recipe is made with sunny-side-up eggs but nothing says you can't make them with scrambled eggs, or any other way you like.
