Colombian Stuffed Potatoes Recipe

Stuffed potatoes are one of the most popular dishes in Colombia, so much so, that there is not just one version of the recipe, but many versions that differ from region to region and from family to family; in some places, they mix the ground beef with rice, in another, they don't use rice but a boiled egg, or half.

Colombian stuffed potaotes, Easy and original recipies

Follow at home this simple recipe to taste one of the flavors of Colombia.


Ingredients

(Serves 4 people)

  • 5 large potatoes

  • 1 lb ground beef

  • 2 tomatoes peeled and cubed

  • 1 garlic clove finely chopped

  • 1 boiled egg

  • ½ cup of cooked white rice

  • ½ teaspoon of cumin

  • 1 egg

  • ½ cup milk

  • ½ cup wheat flour

  • Salt

  • Oil



Instructions

  1. Peel and wash all the potatoes, place them in a pot with water and boil until they soften enough to make mashed potatoes. Add salt to the cooking.

  2. In a skillet, combine the ground beef, diced tomatoes, minced garlic, cumin, and salt. Cook until the meat is completely cooked.

  3. Add the rice and the chopped boiled egg to the meat. Mix all the ingredients very well.

  4. Take a handful of mashed potatoes, shape it into a ball, and with your finger make a deep hole to incorporate the mixture of meat, rice, and egg.

  5. Cover the hole with a little more mashed potatoes, making sure it is well sealed. Repeat the procedure until you've made enough balls.

  6. In a deep bowl, add the egg, flour, milk, and a pinch of salt. Mix very well.

  7. Put the potato balls one by one in the mixture and then take them to a pan with hot oil. Fry them until they are completely golden.

  8. Remove them from the oil and let them drain on absorbent paper, and serve.

If you want to avoid the oil and extra calories, you can place them in a baking dish and bake at 180 °C until golden brown.


To enjoy the complete experience, experts recommend accompanying the potatoes with ají (chili), but it is also traditional to accompany the stuffed potatoes with a garnish of rice or with a salad of green leaves.
