Pico de Gallo Salsa
This salsa with fresh vegetables is a winner all over the world, not only in Mexico. It is the ideal accompaniment to many dishes.

A healthy garnish or accompaniment that will give our dishes that fresh touch. (Serves 2 cups)
1 big red tomatoe
Lime juice (4 limes)
1 red pepper
1/3 cup of Fresh Coriander
Salt and Pepper To taste
Chop the tomato, onion, and jalapeño chili into squares and place them in a bowl.
Stir well, and add the lemon juice and coriander. Stir again very carefully so that the ingredients maintain their texture.
Season with salt and pepper to taste.
Cover the bowl with plastic wrap and refrigerate for at least 20 minutes before serving.
This sauce keeps very well refrigerated for about two to three days ... the texture of the ingredients will not be the same, but it will retain its flavor anyway.
