(Serves 6 people)
2 kg of medium shrimp
2 diced medium onions
7 tbsp of ají Amarillo (yellow chili)
200 ml of milk cream
2 tomatoes without skin or seeds
2 minced garlic cloves
3 boiled eggs
The first thing you should do is clean the shrimp very well. To do this, remove the heads and tails from the shrimp. Likewise, remove the carcasses and the alimentary canal located in the spine. Wash them with plenty of water and reserve.
On the other hand, in a large container, heat the milk cream. Let it rest for about 5 minutes.
Heat a pan with a drizzle of oil to start spicing. First, add the onion and fry until transparent, then add the garlic and tomato. Season with a little salt and pepper and stir very well.
Add the yellow pepper and milk cream. Mix everything carefully. If you notice that the preparation is very dry, add a little more milk cream. Let cook over medium heat for about 5 minutes.
Add the shrimps. If necessary, add a little more milk cream. Rectify the seasoning and cook for a couple more minutes.
Serve and garnish with chopped boiled eggs.
Accompany the spicy shrimp with yellow potatoes or a portion of white rice.
