Serve seafood with fresh mango salsa and your family and friends will be happy about dinner. This dish is an ideal option for when you are looking for a healthy dish, full of flavor and contrasts of textures, colors, and aromas.
This fish has a spectacular flavor and also has a super colorful appearance that will whet your appetite. You can choose any fish you like, but for this recipe, we are using white fish.
Ingredients
(Serves 4 people)
For the fish
4 white fish fillets I used Basa - Tilapia would work fine
olive oil spray
salt and pepper to taste
For the salsa
2 cups mango ripe but still firm, peeled, and cubed (about 2 small mangoes)
1 lime
1 1/2 tbsp red onion finely chopped
1 tsp Mango Habanero Sauce La Meridiana (Available at the shop)
1 tbsp fresh cilantro chopped
Pinch salt
You can add as much salsa as you like, the Mango Habanero Sauce has a mildly spicy flavor, but be careful to not add too much.
Instructions
For the fish:
Preheat oven to 380F. Line a baking sheet with parchment paper and lightly spray it with olive oil.
Arrange the fish fillets, season them with salt and pepper and lightly spray them with olive oil. Bake the fish for 10 minutes or until cooked.
For the salsa:
While the fish is baking, prepare the salsa. In a bowl, combine mango, the juice of 1/2 lime, red onion, Habanero Mango Sauce, fresh cilantro, and a little salt.
Top fish fillets with salsa, drizzle with the juice of 1/2 lime, and serve.
