The toasted tortilla chips that are used as the base, are actually called "totopos" in Mexico. These can be made from corn tortillas cut into triangles that are fried, and are commonly made when the tortillas start to get a bit hard.
Here is the step-by-step preparation of a delicious plate of Mexican nachos, ideal to share with friends as a starter or tapa.
200 grams of tortilla chips
2 cups of black beans (optional)
1 medium onion
2 red tomatoes or tomatoes
1 garlic clove
1/3 cup of chopped fresh cilantro
Neutral oil, such as canola or sunflower.
Black pepper to taste
Salt to taste
Preheat the oven to 200 degrees.
Wash the cilantro, the tomatoes, the chiles, and the lemon.
Cut the coriander into small pieces until filling a third of a cup.
Cut the tomato into cubes. Remove the seeds and the watery part of the center.
Peel the onion and garlic and cut them into very small pieces.
Cut the jalapenos into strips and the lemon in half.
Put a couple of tablespoons of oil in a pan, and fry with the onion and garlic. Cook for a few minutes, until the onion, begins to look a little transparent.
Arrange the tortilla chips in a large baking dish, in such a way that the entire surface is covered and that they remain as little overlapping as possible.
Add a layer of grated cheese on top of the tortilla chips
Add on top of the cheese the onion mixture, tomatoes, and chopped jalapeños over the cheese. Sprinkle with salt and pepper. Include the beans in this layer, if applicable.
Bake for 7 minutes or until the cheese melts.
After removing from the oven, sprinkle with the chopped coriander and lemon juice.
Tip: We recommend accompanying them with guacamole in the center of the plate.
