Risotto alla milanese- Easy Recipe

Italian cuisine has us completely in love, not only for its flavour, but also for its simplicity. A clear example is this Milanese risotto is a delicious Italian recipe, one of the simplest and most elegant risottos that exist.

The recipe is very simple and the risotto remains with that characteristic creaminess that is achieved thanks to the type of rice with which it is made and the technique that is followed to cook it. The note of color and flavor is given by saffron, an essential ingredient in this recipe.

It is ideal as a single dish and also as a garnish for meat and fish dishes, being a classic that accompanies the famous ossobuco a la milanese.

Risotto alla milanese. Italian rice

This delicious recipe for the classic risotto a la milanesa, is prepared without special ingredients and in a few minutes, a delight within everyone's reach. Follow this:


(Serves 4 people)

  • 250 g of arborio or carnolli rice

  • 1 L of hot chicken broth

  • 1 ½ cups grated Parmesan cheese

  • 1 cup of white wine

  • 1 onion finely chopped

  • 4 tbsp. of olive oil

  • 1 pinch of saffron

  • Salt

  • Black Pepper


  1. Sauté the onion a little in a large skillet with the oil

  2. Add the rice and after a few minutes the white wine. Cook without stopping moving.

  3. When the wine has been absorbed, begin to add the chicken broth little by little so that the rice absorbs it.

  4. Halfway through cooking add the saffron and salt and pepper.

  5. When the grain is soft add half of the Parmesan cheese and add it to the rice.

  6. Serve and finish with a little more cheese.

Serve and finish with a little more cheese as a single dish or as a side with meat or fish. And enjoy the authentic Italian flavor.
