When thinking of Mexico, either in its gastronomy or in its landscape, the nopal cannot go unnoticed. "More Mexican than the nopal", it is often said, and it is an icon of Mexican identity, so much so that it is even stamped on the national shield of Mexico.
The impressive variety of uses of the cactus, its content of moisture, proteins, vitamins, sugars, minerals, alkaloids, and fiber makes its structure truly magical, it can certainly be included among the miracles of nature.
Use nopales as a vegetarian substitute for any non-veg dish, and also you can prepare many delicacies like this delicious nopal salad. Take note and enjoy.
Ingredients
(Serves 2)
2 cups DOÑA MARÍA® Nopalitos, drained
¼ cup red onion, cubed
¾ cup cherry tomato halved
1 lime
1 teaspoon olive oil
Salt to taste
Cotija Cheese to taste (Skip for Vegan Recipe)
Instructions
In a large mixing bowl add the sliced nopales, onions, and tomatoes.
Season with lime juice, olive oil, salt, and pepper to taste.
Mix ingredients together.
Serve with cotija cheese on top.
