Fish in Adobo Skewers

Skewers are the perfect way to prepare delicious dishes by combining ingredients that provide delicious textures, colors, aromas, and flavors.

On this occasion, we share with you this simple recipe for marinated fish skewers with guajillo chili.

Fish in Adobo Skewers Recipe

If you love skewers, then you will love this easy recipe to prepare at home.


(Serves 4)

For the marinade:

  • 8 pieces of guajillo chili pepper deveined and without seeds

  • ¼ small piece of onion

  • 1 clove garlic

  • ½ teaspoon cumin powder

  • ½ teaspoon white vinegar

  • 1 cup of water

  • 2 teaspoons chicken bouillon powder

For the skewers:

  • 500gr of Whitefish or Seabass

  • 1 piece of purple onion in medium cubes

  • 1 piece of green bell pepper in medium cubes

  • 1 piece of red bell pepper in medium cubes

  • 1 piece of orange bell pepper in medium cubes

  • Lemons to accompany


  1. Season the fish all over and reserve.

  2. In a pan roast the onion and garlic. Then, roast the chiles on both sides, being careful not to burn them. And soak them in hot water. Drain.

  3. Blend the onion, garlic, chiles, cumin, vinegar, water, and chicken broth.

  4. Pour the marinade over the fish and mix. Reserve in the refrigerator to marinate for an hour.

  5. Assemble the skewers by alternating the colored peppers, the onion, and the cubes of marinated fish.

  6. Heat a large frying pan or griddle and spread olive oil. Arrange the skewers on the skillet over medium heat. Rotate the skewers so they cook evenly.

  7. Serve with lemons.
